How search works

You can type the way you would ask a friend: "something quick with chicken", "vegetarian for guests", "dessert without an oven". The search understands what you mean – not just the words you use:

The search runs on turbopuffer, a vector database that combines classic text search (with English word stemming) and semantic search, where each recipe is stored as a "meaning vector". No cookies are set; only the search term itself is saved, so the site can see what people are looking for.

A lovely starter that can be prepared well in advance, then just needs the cream and a sprinkling of hibiscus before serving.

Ingredients

  • 20langoustines (40-50 g per person depending on your plate - mine has a diameter of 10 cm)
  • 6 tbspcream
  • 1yuzu or 1.5 tbsp yuzu juice
  • 5grams dried hibiscus
  1. Shell the langoustines and remove the intestinal tract and any roe.
  2. Finely chop the meat and divide it into four equal portions.
  3. Place each portion between two sheets of baking parchment and flatten with a rolling pin.
  4. Transfer everything to the freezer. The meat needs to be frozen solid, so it is best to prepare the langoustines the day before.
  5. Squeeze all the juice from the yuzu. Strain and blend with the cream.
  6. Leave in a warm place for about an hour or until thickened.
  7. Grind the hibiscus in a blender or coffee grinder to a fine powder.
  8. Pass through a sieve and store in a dry container.
  9. Remove the baking parchment from the frozen langoustines and let them thaw on a cold plate.
  10. Add a little salt.
  11. Spoon the yuzu cream around the edge of the plate.
  12. Dust the dish with the hibiscus powder using a small fine sieve.
